Baked Brinjal Pizza
On Saturday’s menu : Baked Brinjal pizza
Ingredients
1 brinjal, cut in slices
Olive oil to brush
1 /4 Cup Troovy Pizza Pasta Sauce
1 Cup grated mozzarella cheese
1 Cup chopped bell peppers (red, yellow, green)
Italian seasoning and salt to taste
Fresh basil leaves (garnish)
Directions
1.Brush both sides of brinjal slices with olive oil and bake the brinjal slices until roasted.
2.Arrange the brinjal slices on a baking sheet.
3.Spread a layer of Troovy Pizza Pasta sauce on each brinjal slice.
4.Sprinkle grated mozzarella cheese and top with chopped vegetables, Italian seasoning
and salt.
5.Bake again until the cheese is melted and bubbly.
