Asian Fusion Vegetable Soup
Ingredients
1 tbsp oil (vegetable or olive)
1 medium onion, diced
2 garlic cloves, minced
1 medium carrot, sliced
1 bell pepper, diced
2 cups mixed vegetables (e.g., mushrooms, broccoli, snow peas)
4 cups vegetable or chicken broth
1/4 cup Troovy’s Stir Fry sauce
1 cup cooked noodles or rice
2 green onions, sliced (for garnish)
Directions
In a large pot, heat oil over medium heat. Add onion and garlic, sauté until softened.
Stir in carrot, bell pepper, and mixed vegetables. Cook for 5-7 minutes until vegetables start to soften.
Pour in the broth and Troovy’s Stir Fry sauce. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
Add noodles or rice, add them to the pot and heat through.
Garnish with green onions before serving.
