Broccoli Almond Soup recipe
Broccoli is one of the healthiest vegetables out there. However, the problem arises when you want to feed it to your younger ones. Broccoli Almond soup is a creamy soup recipe that is filled with protein and nutty almonds. The best part? It is delicious for kids and can be served alongside garlic bread, pasta or salads.
Ingredients of Broccoli Almond Soup :
- 2 cups Broccoli
- 1 sliced Onion
- 4 cloves Garlic
- 1 cup Milk
- 1/4 cup Whole Almonds
- Salt to taste
- 1 Whole Coarsely Pounded Black Peppercorns
- 1 teaspoon Extra Virgin Olive Oil
step by-step method
Step 1 Preparing the ingredients
First, clean the broccoli florets and ready the other ingredients. Soak the almonds in hot water for around 10 minutes. Peel off the skin from the almonds and set them aside.
Step 2 Saute the ingredients
Heat oil in a wok at medium flame. Now add the garlic, and onions and saute until the onions become soft. Once done, add the broccoli florets and saute them for a minute. Sprinkle salt, cover the pan and steam the broccoli in it for about 3 to 4 minutes. Once you notice the broccoli steamed just enough to take a bite, turn off the heat. Allow the broccoli onion mixture to cool. When cooled, add the broccoli, soaked almonds and milk into a mixer grinder and blend to make a smooth puree
Step 3 Cook the soup
Once blended, pour the broccoli almond soup into a saucepan. Bring it to a brisk boil and turn off the heat thereafter. Add some more salt according to taste.
Step 4 Serve hot
Garnish the Broccoli Almond Soup with crushed black pepper and serve hot.
