Caprese Pasta salad
Ingredients
1 cup whole-wheat penne
¼ cup lemon juice
¼ cup extra-virgin olive oil
2 tbsp. vinegar
1 tsp. finely chopped garlic
1 tsp. honey
¾ tsp. salt
½ tsp. ground pepper
2 tbsp. Troovy’s tomatoes sauce
1 ¼ cups cherry tomatoes
4 ounces mozzarella
3 tbsp. thinly sliced fresh basil
Directions
Whisk lemon juice, oil, vinegar, garlic, honey, salt and pepper together in a large bowl.
Gently stir in tomatoes, mozzarella and the cooked pasta along with Troovy’s Tomato sauce.
Serve at room temperature or cover and refrigerate for up to 3 days.
Stir in sliced basil just before serving. Garnish with basil leaves, if desired
