Crispy Fritter salad
Ingredients
2 cups peas
1/2 cup chickpea flour
1/4 cup water
2 tbsp. mint leaves
2 cloves garlic
1 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. chili powder
Salt and pepper to taste
2 tbsp. olive oil
2 cups mixed greens
Troovy’s tomato sauce as dip
Directions
Mix peas with flour, water, mint, garlic, cumin, coriander, cayenne, salt, and pepper.
Cook spoonful of the mixture in olive oil until golden and crispy.
Arrange greens on a platter. Top with tomatoes, cucumber and onions
Serve with lemon wedges and Troovy’s Tomato sauce as a dip
