Grilled Eggplant
Ingredients
2 medium eggplants, sliced into 1/2-inch rounds
1/4 cup Troovy’s Imli sauce
2 tbsp olive oil
1 tbsp soy sauce
1 tbsp honey
2 garlic cloves, minced
1 tsp ground coriander
1/2 tsp cumin
Salt and pepper to taste
Directions
In a bowl, mix Imli sauce, olive oil, soy sauce, honey, garlic, coriander, cumin, salt, and pepper.
Brush eggplant slices with the marinade and let sit for 30 minutes.
Preheat grill to medium-high heat. Grill eggplant slices for 4-5 minutes per side, until tender and charred.
Serve hot.
