Mediterranean Nutri Pasta

Ingredients
2 cups Troovy’s Millet Penne pasta
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup red onion, thinly sliced
1/4 cup fresh basil leaves, chopped
2 tbsp olive oil
1 tbsp balsamic vinegar
1 garlic clove, minced
1/2 tsp dried oregano
Salt and pepper to taste
Directions
Boil Troovy’s Millet Penne pasta in salted water. Drain and set aside.
In a large bowl, combine cherry tomatoes, olives, feta, red onion, and basil.
Whisk together olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper.
Toss the cooked pasta with the veggie mixture and dressing until well combined.
Garnish with extra basil. Serve at room temperature or chilled.
