Pink Sauce Beetroot Pasta

- 100g spaghetti pasta
- 1 medium-sized beetroot
- 1 cup coconut milk
- 2 tablespoons Troovy Pizza and Pasta sauce
- 2 cloves garlic, minced,
- 1 tablespoon olive oil
- Salt and pepper to taste
Step 1: Prepare the Beetroot Puree
In a blender, add the chopped beetroot along with a minimal amount of water. Blend until smooth and creamy, adding more water if needed to form a puree. Set aside.
Step 2: Sauté the Garlic
In a large saucepan, heat olive oil over medium heat. Add the minced garlic to the pan and sauté until it becomes fragrant and lightly golden.
