Rainbow Salad
Ingredients
4 cups mixed greens
1 cucumber, sliced
1 red bell pepper, sliced
1 carrot, julienned
1 cup snap peas
2 green onions, sliced
¼ cup cilantro
1 cup cherry tomatoes, halved
1 avocado, sliced
¼ cup Troovy’s Stir-fry sauce
1 tbsp rice vinegar
1 tbsp sesame oil
1 tsp honey
1 tbsp sesame seeds (for garnish)
Directions
Wash and chop all the vegetables.
In a small bowl, whisk together Troovy’s Stir-fry sauce, rice vinegar, sesame oil, honey and lime juice.
In a large salad bowl, combine the mixed greens, cucumber, red bell pepper, carrot, snap peas, edamame, green onions, cilantro, cherry. tomatoes and avocado.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Sprinkle toasted sesame seeds on top for added texture and flavour.
Enjoy the salad right away, or let it chill in the refrigerator for a bit.
