Tomato and Cauliflower Soup
Ingredients
2 tbsp oil
1 tsp cumin seeds
1 onion, chopped
2 garlic cloves, minced
1-inch ginger, grated
1 green chili, chopped
100 g Troovy's tomato sauce
200 g tomato purée
1 small cauliflower, florets
4 cups vegetable broth
1 tsp ground cumin, 1 tsp ground coriander
1/2 tsp turmeric, 1/2 tsp paprika, 1/2 tsp garam masala
Directions
1. Heat oil in a pot. Add cumin seeds and let sizzle.
2. Add onion, cook until soft. Stir in garlic, ginger, and green chili.
3. Add spices and cook briefly.
4. Mix in tomato sauce and tomato purée. Stir in cauliflower and pour in broth.
5. Simmer until cauliflower is tender (15-20 mins).
6. Blend for smooth texture if desired. Stir in coconut milk, season with salt and pepper.
7. Garnish with cilantro. Serve with lemon wedges.
