Sodium Metabisulphite is an antioxidant and preservative obtained by the addition of sulfur dioxide to sodium.

People who are intolerant of natural sulphites should also avoid added sulphites (E221-228). The classical antinutritional behavior of the additive is that it destroys vitamin B1 in food.



Sodium metabisulfite is used as an antioxidant and antimicrobial agent that functions as a preservative in many food products.


Used in

soft drinks and fruit juices, dehydrated vegetables; dehydrated fruits; peeled potatoes


Global usage

Allowed to use in Europe and the US.
